After sketching the national context, I outline the political aspects of the presence of milk in villages, towns and cities, on the basis of newspaper articles about the urban milk markets in Szombathely, and then I try to explore the characteristics of the Vas County (in western-Hungary) milk cooperatives that played a key role in the urban-rural relationship between 1918 and 1930.Milk production in Hungary became an issue regulated by political institutions in the first three decades of the 20* century. The political decisions embodied in legislation interacted with certain social groups, including the professional staff of manorial estates, individual farms and the increasingly important role of skilled women in dairy farming, through the laboratory system of institutions created by the regulations on quality and control. The actions of the government,municipalities and administrations in the dairy sector reflected both the already decade-old issue of security of supply, uncertainty and threats to milk quality, and the role of interest groups as economic policy and the state became more closely intertwined. One of the most interesting questions in the context of Vas County is the interaction of post-war conditions and the prolonged consolidation of the new state borders with the dairy economy.Looking at the case of Szombathely, a city traditionally well developed in terms of dairy farming (and also prominent in smuggling butter to Vienna, which was also suffering from food shortages), the daily news reports on milk adulteration and the organisation of the supply chain are dominated by the lack of milk. The solution offered in the newspapers was the establishment of a well-controlled room in the city milk hall, to be set up by the state authorities and initiated by the government or local authorities. The control and controllability of the milk market were seen as crucial issues in the establishment and operation of the milk hall. The focus of milk control was mainly on procedures exploiting shortages, such as watering.The example of the cooperatives and sources examined in the paper shows that in the early years of the 20* century- milk cooperatives enjoyed greater autonomy, while in the 1930s they increasingly came under the aegis of the OMTK, a state company. It is true both before and after the First World War that annual profits were in fact minimal, while cash flow and the equipment and infrastructure purchased were more significant. Thus, dairy cooperatives were more important for raising the technological level of farming and building market links for households. Typically, it was indeed households that were the members of the dairy cooperative, with only occasional entries of persons having outstanding numbers of animals being observed in the membership lists. Increasing state intervention and expectations have had a negative impact on local and micro-regional supply chains, what is now described by social science as food self-sufficiency. Prior to 2018, there had been no interdisciplinary basic research on the topic in Hungary, so to fill the gap, in 2018, an interdisciplinary research group was established at the Institute of Ethnology, which carried out nationwide research. The present study is based on the fieldwork experience from two schools investigated by the author: the János Lenkey Primary School in Eger (formerly Primary School No. 1) and the Tamás Bolyki Primary School in Ózd, as well as a large amount of information gleaned from questionnaires and interviews. My research was also extended in terms of historical perspectives: I carried out archival source exploration and expanded the field of my investigations with a research location well-known from my previous research, Salgótarján, as a sort of vantage point next to Ózd and Eger, a third typical city in northern Hungary. Children’s public catering has gone through significant changes in the last 6-7 years, but prior to that, it showed a relatively uniform level, corresponding to the current level of sources of raw material. The public catering and general work obligation, which started in the Rákosi era and culminated in the Kádár era, significantly changed the eating habits of families. The traditional elements typical for a locality have disappeared as the globalization efforts of socialism were accomplished. The ever shortening times for preparing, cooking, and consuming food moved society in the direction of canteens, fast food restaurants, and later, after the regime change, global fast food chains. At the moment, education on proper nutrition is not part of academic teacher training, so for lack of a better way, teachers organize children’s school meals based on their own experience and socialization or following the school’s regulations (if there are any), without a unified concept. The number of meals at home has been reduced to light breakfasts, lunches, and dinners, with families mostly sitting down together at the dinner table, often consuming ready meals. The lack of contact with the food and the person preparing the food has a negative impact on children’s psychological development. Relying on extensive basic research and participant observation, through the joint effort of specialists from several fields of social sciences, a significant improvement could be achieved in both public catering and education on healthy nutrition. A nők munkába állása és az iskolai gyermekétkeztetés, az üzemi étkeztetés általánossá válása uniformizálódást vont maga után, a szocialista modernizáció életmódra vonatkozó propagandái pedig egységesítették és drasztikusan leegyszerűsítették az addig tájegységi jellegzetességekben gazdag táplálkozáskultúrát. A vizsgálataim során arra a megállapításra jutottam, hogy a közétkeztetésben résztvevő gyerekek nyitottabbak voltak az új ízek iránt, mint „nem menzás” társaik és sok esetben rugalmasabban, kimondottan jó problémamegoldó képességgel kezelték a számukra váratlan helyzeteket, társaikkal szemben is nyitottabbak voltak. Amennyiben a reziliencia fogalmát az egyén szintjén velünk született alkalmazkodási képességként definiáljuk, amellyel képesek vagyunk rugalmasan alkalmazkodni a társadalmi környezet különböző tényezőihez, megállapítható, hogy a három különböző észak-magyarországi iskolában a menzai étkezés összefüggést mutatott a gyerekek rezilienciájával. A kutatás nem reprezentatív, csupán elővizsgálat, a kiragadott példákon felül mindenképpen szükséges lenne egy teljeskörű vizsgálat kimondottan erre a kérdésre fókuszálva.
