This study aims to better understand the plant defence mechanisms regulated by red light, in particular, the effects of red light at night when most phytopathogens are highly infectious. Our results showed that superoxide production significantly increased immediately after red light exposure and, together with hydrogen peroxide levels, was highest at dawn after 30 min of nocturnal red‐light treatment. In parallel, red‐light‐induced expression and increased the activities of several antioxidant enzymes. The nocturnal red light did not affect salicylic acid but increased jasmonic acid levels immediately after illumination, whereas abscisic acid levels increased 3 h after nocturnal red‐light exposure at dawn. Based on the RNAseq data, red light immediately increased the transcription of several chloroplastic chlorophyll a‐b binding protein and circadian rhythm‐related genes, such as Constans 1 , CONSTANS interacting protein 1 and zinc finger protein CONSTANS‐LIKE 10. In addition, the levels of several transcription factors were also increased after red light exposure, such as the DOF zinc finger protein and a MYB transcription factor involved in the regulation of circadian rhythms and defence responses in tomato. To address this issue, extensive studies have explored milk alternatives from various animal and plant sources. This study introduces a method for producing white lupin milk, resulting in fermented dairy-like products (vegan yogurt and sour milk alternatives). Four commercial yogurt cultures, including two mesophilic (CHN-11, CHN-22) and two thermophilic (YC-380, YC-X11) mixed bacterial cultures, were tested, with thermophilic ones yielding superior sensory outcomes for lupin-based yogurt alternatives. Incorporating inulin (2%) enhanced sensory appeal, particularly evident in strawberry and peach-flavoured variants, which achieved sensory scores comparable to cow milk yogurts. Furthermore, white lupin-based yogurts demonstrated superior water-holding capacity (up to 47.11 g/100 g in comparison with 42.35 g/100 g measured for cow milk yogurt), influencing texture and mouthfeel. They also exhibited favourable fatty acid profiles, notably rich in beneficial unsaturated fatty acids such as linoleic and linolenic acid (up to 10.15% and 8.43%, respectively), indicating potential health benefits. Sensory evaluation underscored the impact of starter cultures on product attributes, with certain cultures yielding more favourable results. In conclusion, white lupin emerges as a promising alternative protein source with the potential to produce high-quality dairylike products. Oleogels can be formed using edible and non-edible vegetable oils, depending on the desired application. In this study, we used an emulsion-template approach with three oil systems: canola oil, sunflower oil, and castor oil, and combined hydroxypropyl methylcellulose (HPMC) and xanthan gum (XG) as oleogelators in specific ratios to form oleogel. Stable oleogels were formed when both oleogelators were present in the system. The oil binding capacity of the oleogel with respect to the amount of oil loss varied from less than 5% to more than 30%, depending on oil saturated fatty acid composition and HPMC:XG ratio. Higher saturated fatty acid concentration in the oil strengthens the oleogel matrix and reduces the oil loss rate. High HPMC composition and low XG composition reduce the oil binding ability of oleogels. In oleogel systems, HPMC acts as an emulsifier and XG acts as a thickener, resulting in a lower-than-average XG concentration and a thinner gel. Although the structure and color of oleogels are very stable over 28 days of storage, the rate of oxidation still needs to be minimized.
