Although eco-guilt has already emerged in other service sectors, such as tourism, and general scales exist to measure it, no such scale exists in the context of food consumption. The aim of this research is to develop and validate a scale to measure eco-guilt related to food consumption. Methods: To create the scale in an objective way, we used the Sustainable Development Goals as a framework. Data were collected from university students; a questionnaire was completed online by 367 respondents. The responses were analyzed from several different perspectives, using multiple methods following the principle of triangulation. For the data analysis, the Psych and Mokken packages of R software (version 4.4.0) were used. Results: The constructed scale was based on 13 items. An overview of the reliability of the scale was provided using various indicators (e.g., Cronbach’s α = 0.86, ωh = 0.63, ωH asymptotic = 0.71, and ωt = 0.89). Based on the analyses, we proposed a reduced form with nine items for the measurement of food-related eco-guilt. Conclusions: The results of this research provide a scale to help understand what motivates consumers to make more sustainable consumption choices. Moreover, the scale is relevant to future research focused on understanding how guilt influences future food choices.}, year = {2024}, eissn = {2072-6643}, orcid-numbers = {Unger-Plasek, Brigitta/0000-0002-6534-7107; Temesi, Ágoston/0000-0001-6128-6653} } @CONFERENCE{MTMT:35195121, title = {Towards understanding the food related eco-guilt – a scale validation for measurement}, url = {https://m2.mtmt.hu/api/publication/35195121}, author = {Unger-Plasek, Brigitta and Temesi, Ágoston and Lakner, Zoltán}, booktitle = {Proceedings of the International Food Marketing Research Symposium}, unique-id = {35195121}, year = {2024}, pages = {129-136}, orcid-numbers = {Unger-Plasek, Brigitta/0000-0002-6534-7107; Temesi, Ágoston/0000-0001-6128-6653} } @article{MTMT:35180984, title = {Gender differences in research fields of bioeconomy and rural development-based on sustainable systems in Latin America and Africa regions}, url = {https://m2.mtmt.hu/api/publication/35180984}, author = {Ordonez Olivo, Maria Lourdes and ADELEYE, OLUWAKEMI RACHAEL and Lakner, Zoltán and Farkas, Tibor}, doi = {10.1371/journal.pone.0308713}, journal-iso = {PLOS ONE}, journal = {PLOS ONE}, volume = {19}, unique-id = {35180984}, issn = {1932-6203}, abstract = {Using bibliometric analysis of large-scale publication data is a simple approach to exploring gender-related trends, especially gender equality in academic publishing. The aim of this study is to investigate gender trends in the fields of bio-economy and rural development sciences in two under develop regions as Latin America and Africa. This study examines gender differences in these fields in order to: (1) recognize the contribution of female researchers in bioeconomy and rural development, (2) explore the relational structure of gender aspects in academic publications, (3) identify trends in female authorship in these scientific research fields over time, and finally (4) identify gender potentials for women to become more visible in these fields of study. To achieve these objectives, we used bibliometric tools to analyses 1891 publication records in bioeconomy and rural development. After cleaning the database of full names of authors of academic publications relevant to the field studies, we performed a series of statistical analyses in R and SPSS software, such as Lotkas distribution, network analysis, co-authorship analysis and spatial distribution of authors in the study. The results show that the number of male authors is almost three times higher than the number of female authors, suggesting that women are under-represented in the fields studied. Men occupy the most important position of authorship in scientific articles; publications with corresponding male authors were found in 1389 out of 1891 publications related to the bio-economy and rural development. In terms of geographical regions, publications with female authors were more prevalent in European and North American areas, with a small exception in some developing countries such as Argentina and South Africa. In terms of research networks, from the total number of authors evaluated, only 23% are female authors on the map of research influence. It also seeks to investigate the impact of the sectoral economy on the proportion of renewable energy consumption in Ethiopia. This study used an explanatory research design and a quantitative research approach. An autoregressive distributed lag model was applied to explore the long and short-term relationship among variables. A time series of data aggregated and disaggregated ranging from 2000 to 2022 was used. According to this study, sustainable finance programs are essential for advancing and aiding renewable energy projects in the long and short term. Ethiopia’s use of renewable energy will increase as sustainable finance rises. The main economic sectors determining Ethiopia’s consumption of renewable energy in the long and short term include the manufacturing, mining and service industries. This study’s findings imply that policies focusing on providing continuous financial support and fostering international cooperation to promote the development of the manufacturing sector are needed. This could include incentives for adopting renewable energy technologies and investing in renewable energy infrastructure. On the other hand, since the service and mining industries negatively impact renewable energy use, there is a need to diversify renewable energy sources beyond these sectors. This could involve promoting renewable energy projects in other sectors, such as manufacturing, agriculture, construction and trade. Based on the findings of this study, it is suggested that policymakers carefully consider the consequences within each economic sector when formulating decisions related to renewable energy. Currently, obesity is considered one of the most relevant topics of discussion because an epidemic heave of the incidence of obesity in both developing and underdeveloped countries has been reached. According to the World Obesity Atlas 2023 report, 38% of the world population are presently either obese or overweight. One of the causes of obesity is an imbalance of energy intake and energy expenditure, where nutritional imbalance due to consumption of high-calorie fast foods play a pivotal role. The dynamic interactions among different risk factors of obesity are highly complex; however, the underpinnings of hyperglycemia and dyslipidemia for obesity incidence are recognized. Fast foods, primarily composed of soluble carbohydrates, non-nutritive artificial sweeteners, saturated fats, and complexes of macronutrients (protein-carbohydrate, starch-lipid, starch-lipid-protein) provide high metabolic calories. Several experimental studies have pointed out that dairy proteins and peptides may modulate the activities of risk factors of obesity. To justify the results precisely, peptides from dairy milk proteins were synthesized under in vitro conditions and their contributions to biomarkers of obesity were assessed. Research on EE has advanced extremely rapidly in the last two decades. These changes are evident not only in the quantity of published works but also in the evolving methods of academic communication, the rise of emerging nations as prominent contributors to EE research, and the shifting areas of focus in study themes. This current study aims to provide a comprehensive picture of these processes based on a big-data-centred bibliometric analysis of a corpus of 3787 articles that appeared in the Web of Science literature database. The bibliographic metadata was analysed using Biblioshiny, CitNetExplorer, and VOSviewer. To understand the most significant development trends, researchers employed the triangulation method, which included scientific mapping and epistemological analysis in addition to standard tools of bibliometric analysis. This has led to the identification of some study needs. First, improving EE methods in secondary school curricula; second, EE in adult education and the practicality of the findings for andragogy; third, EE in least developed countries and its unique challenges; fourth, combining EE with internet-based, innovative training and education approaches like gamification and simulations; fifth, EE’s role and methodological development in societal economic integration; and sixth, women’s unique EE requirements. Data were cleaned, formatted, and analyzed using VOS viewer (1.6.19) and the R-Bibliometrix package. The research established an increased interest in borrowers’ behavior among scholars. Nonetheless, it is overshadowed by studies in lending behavior, microfinance, banking, peer-to-peer lending, and fintech. The scholarly focus is mainly on the supply side of the credit industry with little regard to demand-side dynamics, such as borrowers’ decision-making processes, which can affect the performance of credit facilities.
