However, there is an important difference between them. ‘Nutrition’ is more biological and expresses the body’s need for nourishment to survive. ‘Eating’, on the other hand, is an occasion for nourishment: a performance. The dichotomy that hunger and nutrition are biological needs, and that the way to satisfy this need is culturally determined, arises every time nutrition and eating are discussed. Ingesting food in the here and now is a communicative activity, a custom, a function and specific code of a culture. When the legal background and dietetic recommendations for school meals are being created, little attention is paid to the conditions and ways children consume food with a scientifically determined nutritional composition. Therefore, we as ethnographers investigated with our own methods, among other things, the physical environment, logistics, and customs of catering and eating in school canteens. In this entire process, the allotted time as well as the communication about food and attitude towards food of the stakeholders – food service managers, cooks, suppliers, service staff, teachers accompanying children, children and their parents – are also important factors. However, since the beginning of the 21st century, the validity of the rural-urban dichotomy has been increasingly questioned, and we are now talking about two interconnected and complementary systems instead. In examining contemporary school meals, we ourselves observed this close and varied pattern of intertwining between the city and the countryside. Therefore, we believe it is useful to identify rural and urban features in contemporary public catering practices, and to outline mixed models that can be placed between the two endpoints in space and time. All of this can be edifying because urbanized foodways, following current food health and gastronomic trends, sustainability, climate and environmental protection requirements, as well as social considerations, return from time to time to the old village farming practices and foodways in various ways, and utilize knowledge related to traditional farming. Illustrated with specific examples, the study outlines three types of school catering models, from the oldest practice called “rural” to the “urban” (urbanized) type. In the Hungarian folk-song space, there have been functioning long-running folk soldier songs, in which the Russian army attacks Hungarians. Those songs are often included in the programmes of modern folk bands and performers. They were already found in the folklore of the anti-Habsburg movement led by Lajos Kossuth in 1848–1849, however, there are obviously also a lot of them among the works on the First World War, in particular about events on the territory of modern Poland and Halychyna. With the beginning of World War I, Halychyna almost immediately became a theatre of military operations, the front line repeatedly went through it, heavy battles of varying success between the Russians and the Austro-Hungarian army continued there, and hundreds of thousands of soldiers died. The purpose of our research is analysing the WWI-period soldiers’ songs of anti-Russian orientation and considering their main types, themes, motifs, variants, etc. So, works about recruitment, marches and drills, soldiers’ lamentations, the course of the war, songs on peace, etc. are distinguished. The article examines collecting and researching the songs, a contribution of famous folklorists to the recording of their texts and melodies, as well as a link to listen to sound recordings from the online archive. It also provides a link to listening to sound recordings from the online archive. The authoress clarifies the issue of origin, rehash and actualization of texts, problems of historicism, etc. She also exemplifies the mentioned themes with several most typical texts that most vividly depict the emotions and thoughts of soldiers who gave their lives for the freedom of the country.
