A tárolás körülményeinek, a tárolás technológiájának biztosítania kell a gyümölcs élettani folyamatainak (légzés, enzimatikus tevékenység) minimalizálását, biztosítania kell a termés húskeménységének állandóságát, meg kell akadályoznia az alma apadását, a benne lévő sav-, íz- és illatanyag-tartalom csökkenését. Mindezt elsősorban az alma lehűtésével érhetjük el. A hagyományos, normál légterű hűtőtárolókban azonban így is elég nagy lehet a tárolási veszteség, és gyakran kifogásolható a minőség is. Az almatermés sajátos mikroanatómiai jellemzőkkel rendelkezik, amelyek a termés eltarthatóságát biztosítják. A termés borító epidermiszsejtjeinek, az epidermiszt borító kutikulának vastagsága, az epidermiszréteget áttörő lenticellák egységnyi területre eső száma, „nyitott” estleg „zárt” volta, az egységnyi felületre eső sztómák, „mikrorepedések” mennyisége, az epidermisz rétege alatt elhelyezkedő hipoderma sejtsorainak száma, vastagsága nagymértékben befolyásolhatja az alma eltarthatóságát. Az almatermés fajtánként eltérő mikroanatómiai paraméterei alátámaszthatják és értelmezhetőbbé tehetik azon megállapításokat, hogy az egyes almafajták tárolásra vonatkozó technológiai igénye eltérő. A fentiek alapján vizsgálatunk célja az összefüggések keresése az egyes almafajták tárolhatósága és az almahéj mikroszerkezete között volt. Vizsgálataink során hat almafajta (Florina, Idared, Golden, Topaz, Jonagored, Remo) héja jellemző mikroanatómiai paramétereinek vizsgálatát végeztük el, vetettük össze a kapott mért eredményeket az ezen almafajták tárolhatóságára vonatkozó ismeretekkel. Kulcsszavak: almahéj, miroanatómia, epidermisz, kutikula, hipoderma, tárolhatóság ABSTRACT The basic purpose of apple storage is to extend the consumption season of the fruit. The storage conditions and the storage technology must ensure the minimization of the fruit’s physiological processes (respiration, enzymatic activity), ensure the constancy of the hardness of the fruit's flesh, prevent the apple from shrinking, and the reduction of its acid, flavor, and aroma content. All of this can be achieved primarily by cooling the apple. However, the storage loss in traditional, normal-air refrigerated storage can still be quite high, and the quality is often objectionable. The apple fruit (pomum) has specific microanatomical characteristics that ensure the product’s shelf life. The thickness of the epidermal layer covering the fruit, the cuticle covering the epidermis, the number of lenticels breaking through the epidermis layer per unit area, whether they are ”open” or ”closed”, the number of stomata and ”microcracks” per unit area, the number of cell rows of the hypodermis located under the epidermis layer, its thickness can greatly affect the shelf life of the apple. The different microanatomical parameters of the apple fruit (pomum) per cultivar can support and make more interpretable the findings that the technological requirements of each apple cultivar for storage are different. Based on the above, the purpose of our study was to find correlations between the storability of each apple cultivar and the microstructure of the apple peel.
